VINEYARDS:
The grapes are grown by counterespalier (Guyot) system on soil of volcanic origin rich in
minerals at an altitude of about 650m above sea level in the hills of Lapio.
WINE HARVESTING:
Hand harvesting is done towards the end of September, generally 2-3 weeks before the grapes for Fiano di Avellino DOCG are picked.
WINE-MAKING:
The grapes are placed in tanks for 12 hours at a temperature of 10°C, and then slowly pressed. This stage is followed by a 15-day fermentation at a controlled temperature of 18°C in stainless steel.
MATURATION:
In stainless steel tanks until the end of the spring following the harvest, when it is put into the bottle where refermentation is induced. The wine remains another 15 months in the bottle before being disgorged, according to the classic method.
ORGANOLEPTIC CHARACTERISTICS:
The color is a golden yellow, its aroma slightly mineral with notes of apricot, pear, peach and citrus, with excellent acidity. Fruit tones remain in the background with a slightly bitter aftertaste, reminiscent of almonds. Excellent persistence of the perlage thanks to the long refermentation in the bottle.
GASTRONOMIC PAIRINGS:
A very versatile sparkling wine, therefore excellent as an aperitif, accompanying seafood crudes, the soups of legumes, appetizers and fish dishes, seafood risotto or porcini mushrooms, white meats, fresh cheeses and vegetable dishes.

Served at a temperature of about 8-10°C
