The carefully harvested grapes are selected manually in the vineyard and in the cellar on a sorting belt before alcoholic fermentation with selected yeasts at a controlled temperature of 23 °C. Maceration on the skins varies from 20 to 25 days with pumping over in the air until the end of fermentation and manual punching-down until racking.
Intense and consistent ruby red colour. The nose shows notes of fresh fruit (currant, blackberry, raspberry), well integrated with a spicy and aromatic woody undertone, with a balsamic hint of resin. On the palate, it shows the freshness and character of a great wine for ageing, with tannin that is evident but already well integrated and balanced by the warmth of the alcohol. The finish is elegant and typically bitterish, recalling the history of thoroughbred Sangiovese.
