The carefully harvested grapes are selected by hand in the vineyard and in the cellar on a sorting belt before alcoholic fermentation with selected yeasts at a controlled temperature of 23 °C begins.
Maceration on the skins varies from 20 to 25 days with pumping over in the air until the end of fermentation and manual punching-down until racking.
Dense, impenetrable ruby colour.
Intense and ample bouquet, dominated by ripe, almost jammy fruit, primarily blackberry, cherry and blackcurrant, which soon gives way to notes of tobacco, and hints of sweet spices, vanilla and cinnamon, with an almost balsamic finish.
In the mouth it is powerful, structured, full-bodied and remarkably fresh, with tannins that are present and well integrated. The finish is long, very pleasant, with a bitter note.
