ChiEliSò is a smallfamily-run business, established in 1972. We are located in the hills of Alto Monferrato, in the municipality of Cassine, a small medieval town located a few kilometers from the city of Acqui Terme. The name ChiEliSò was born in 2005, from my father's love for his children Chiara, Elia and Sofia, and with the same love we produce our wines.
Our vines are located within the natural preservation area "the Bosco delle Sorti - la Communa," an area protected since 2001 and formed by hills, plateaus planted with vines and a wooded area of 300 hectares full of hiking and mountain biking trails.
The area planted with vines is 5 hectares and the wines produced are: Barbera del Monferrato D.O.C, Barbera d'Asti D.O.C.G, Dolcetto d'Acqui D.O.C, Cortese dell'alto Monferrato D.O.C, Monferrato Freisa D.O.C, Syrah and a Sparkling White Wine.
The production chain begins with the management of the vineyard without the use of herbicides and without phytosanitary interventions at a fixed cadence, but regulated by weather data collection stations installed at several points in the vineyards that determine for us the times when intervention is really necessary.
The harvest is conducted manually in order to always choose the best bunches and to keep alive the harvest tradition, celebrated with laughter and shared lunches. The use of sulfites in our wines is kept to a minimum (30-50 mg/liter maximum).
The spirit of the four generations of winemakers to which we belong has always been inspired by love and respect for nature and its products, which is why we continue to cultivate the vineyard in search of a synergy between the needs of production, the natural life of the plants and the soil that hosts them. With the same determination we make wine, remembering that at every stage of processing there must be a beneficial relationship between the wine we give life to and the health of those who will drink it.
You can come and visit us by appointment any time of the year to taste our wines paired with typical Aquese products and visit the medieval village of Cassine.
