Umbria Bianco I.G.T. Arale

Arale is made from carefully selected Trebbiano and Malvasia grapes, with yields slightly higher than black varieties. Harvesting takes place at dawn in October. The grapes, promptly pressed, ferment in barriques with indigenous yeasts. The process is spontaneous, interspersed with daily batonage. Initial racking is followed by alcoholic and malolactic fermentations, with subsequent four annual cleanings. The wine is ready for bottling after a light filtration.
