In 2017 we met agronomist Pedro Parra, with whom we collaborated for 2 years investigating the particularities of our soils to identify the nuances of the various terroirs in the different expressions of cherry. The volcano immediately jumps out: wines that are generally more savory, sometimes salty. This tasting tries to introduce you to this other way of reading wine, in search of the volcano.

1. After visiting the underground winery, we will explain our choices in ecological vineyard management.

2. We will taste six wines in which the expression of the volcanic soil is evident, illustrate the grapes, the different winemaking and aging techniques. Some of these wines areextremely limited editions.

The wines for tasting will be: Return (Etna Bianco Superiore - Sassotondo - a nonprofit project that binds us through our family to another volcano), Number Six (a gentle Orange Wine), Number Ten (a stronger Orange Wine, Greek with long maceration), Monte Rosso (black nocchianello, an ancient, indigenous and almost lost vine from Pitigliano), Poggio Pinzo (cherry wine with long maceration in terracotta), Monte Calvo (cherry wine to which a part of the grape that has not been destemmed gives particular finesse).

3. The wines will be paired with samples of Flamigni's savory pastries, an innovative project to enhance the meaning of a good food pairing, and from the tasting of our BIO EVO OIL from MONOCULTIVAR CANINO olives.

4. The 'winery is certified organic since 1994, we are part of the circuitVolcanicWines and we are members FIVI - Independent Winemakers.


When you come to visit us, get ready for a trip to the countryside, immersed in the nature of rural Tuscia. Everything revolves around wine and the vineyard, so we recommend comfortable clothing. Tastings are held, depending on weather conditions, under our patio or in the air-conditioned tasting room.
