Caulio, from the Latin, means arm or shoot of the vine. Composed of Sangiovese grosso (90 percent), Malvasia nera (5 percent) and Sirah (5 percent), this wine ages one year in non-new tonneaux and barriques to avoid excess tannins, followed by six months in glass before release.
San Gimignano offers an ideal microclimate for viticulture, which has been practiced for millennia, ever since the Etruscans settled in these lands, calling the area Clante, now known as Chianti.
